Bodegas Tradición is the only winery in Jerez that exclusively bottles very old wines that are a reference of each of the sherry styles, and that are capable of satisfying all the senses. Our products have not been altered with sweeteners or coloured wine, they have not been clarified, they have not been filtered or cold stabilised, nor have sulphites been added during the ageing process. In other words, these are genuine wines, authentic in style and have been endorsed by many of the world’s leading wine critics.

And, like all great wines, they are splendid on their own or with different dishes, because their ability to harmonise gastronomically goes far beyond the aperitif or dessert. It is very important to serve it slowly in a large wine glass, such as Burgundy or Montrachet, to enjoy the flavour and the full range of aromas it offers.

Tasting Notes:

Appearance: Mahogany with old gold highlights.
Nose: Spicy aromas – clove and nutmeg – toasted aromas of noble old wood, roasted and pipe tobacco, with a background of liqueur bonbon invite you to savour it.
Palate: Smooth and warm on the palate, inviting an explosive and nuanced finish. The alcohol, perfectly integrated, enhances the balance between sweetness, bitterness and acidity. It is a full-bodied brandy with great persistence, whose power and sapidity leave a lasting memory.

Serving suggestions:

In winter the ideal temperature for tasting is 16º to 18º but our recommendation is not to serve it in a balloon glass to avoid alcohol concentration. If possible, a tulip type glass would be ideal and if not, a Burgundy type red wine glass. In both summer and winter it is very pleasant on the rocks.

Pairing: A good accompaniment to bitter chocolates, medium to strong Havana cigars and nuts. For more daring tastes it is highly recommended with certain types of cheese, such as Idiazábal.
